5 Minute Coffee Cake in a Coffee Cup

When I first ran across this little recipe on Pinterest a week or two ago, I thought "that can't possibly be as good as it looks."  Coffee cake is yummy of course, but made in the microwave?  I was skeptical.  Still, the pictures and the idea that a warm cup of cake could be in my hands in 5 minutes were pretty compelling.  So off to the kitchen I went.


I'm happy to say I was pleasantly surprised with the results.  You'd never mistake this for the tender crumb of a coffee cake made and baked the traditional way, but it was really pretty good!  Less dangerous than a whole cake sitting on the counter, and fun to boot.  The variations are endless.  My favorite coffee cake is loaded with cinnamon and chocolate chips, so I threw some of both into my little test.  You could also try some tiny bits of apple and some cinnamon, or maybe some raisins.  Other kinds of chips?  Go for it!


Coffee Cake in a Coffee Cup

Soften (don't melt) 1 T. butter in a microwave-safe mug.  Stir in 2 T. sugar until fluffy and creamy.   Stir in 1/2 of a lightly beaten egg.  Stir in 2 T. light sour cream, a drop of vanilla extract, and a dash of cinnamon. Stir in 1/4 c. AP flour and 1/8 tsp. baking powder.   Stir in a spoonful of mini chocolate chips and sprinkle the top generously with brown sugar.  Microwave cake on high for 1 minute to start, then at intervals of 10 additional seconds until it's done to your liking (mine took 1 minute, 20 seconds).  Allow to cool and enjoy!
